CARROT CAKE
(Can be
served this as a cold carrot kugel )
ingredients
2 cups flour
2 cups sugar
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 tsp salad oil
4 eggs
3 cups grated carrots (1 lb.)
directions
Beat the eggs, gradually add the sugar until thick and light in color.
Add the oil,
Add the dry ingredients, mixing each in turm
Fold in the carrots.
Pour into 2 loaf pans (greased) or bundt pan.
Bake for 50 minutes @325
