BLACK-EYED PEA SIMANIM SALAD
ingredients
1 15 oz. can black-eyed peas, drained and rinsed
1 cup frozen corn or i small can corn(drained)
1 stalk celery, chopped finely
1 red pepper, chopped finely
1 leek (white parts and a bit of green chopped finely) or 1 green onion chopped finely
1 small zucchini (optional- use for simanim)
1 or 2 dates chopped - optional -use for simanim
1 tbsp chopped parsley (optional)
Dressing
2 tbsp and 2 tsp balsamic vinegar
21/2 tsp honey
1/2 tsp salt
1/8 tsp black pepper
1 tsp Dijon mustard
directions
Mix veggies
Combine dressing ingredients in jar with tight-fitting lid
Pour dressing over salad
Refrigerate at least 2 hours before serving
